Mexican Chilaquiles

Hi! Today I will be showing you how to make some yummy chilaquiles, which is a typical Mexican dish. This dish is so simple and easy to make, as well as delicious, you will want to have any time of the day. My husband and I eat chilaquiles for breakfast, lunch, or dinner depending upon our mood. Okay let's get to the good stuff. You will need:


  • -Corn tortillas, about 4-5 (Tortilla chips also work)
  • -Eggs, about 2-3 (optional)
  • -Oil of preference, any will do.
  • -1 small can of El Pato sauce, like the one on the right. You can use a regular tomato sauce if you don't like the spice of the El Pato sauce. Note: You can also make the sauce from scratch if you'd like and have time, although it doesn't take long. I have included instructions on how to make it yourself).
 The following are optional:

  • Cheese (I personally like mozzarella just to make it taste even more delicious.)
  • Onion and garlic (I like the taste these two bring to the dish.)
  • Pinch of salt to taste.
  • Sour cream to top it off with.
  • Meat of choice, like shredded chicken, beef, or carnitas.
Here is how to make your chilaquiles:
  1. Cut the tortillas into about inch squares or rectangles, whatever you prefer.
  2. Heat up your pan and the oil.
  3. Add your cut up tortilla squares to your pan and let them fry, stirring every now and then so they don't burn. (If you want to add the garlic and/or onion, add these to the pan once the tortillas are getting crispy like tortilla chips.)
  4. Once your tortilla squares are crispy like tortilla chips add your eggs and scramble them. Keep cooking until the eggs are done.
  5. At this point add your salsa and mix well until everything is covered. (I add the mozzarella cheese at this point so it melts and blends well with everything.)
  6. That's it! You are now ready to serve and eat! 
You can serve your chilaquiles with some refried beans on the side or just by themselves, either way they are GOOD. You can also top them off with some sour cream and/or meat if you wish to. Enjoy!

How to make the sauce from scratch:

  • You will need: 2-3 tomatoes, a clove of garlic, 1/4 of an onion, a pinch of salt, and (optional) 1 jalapeño for spice.
  • Instructions: Cut up the tomatoes into quarters and put in a small sauce pan. Add the garlic, onion, salt, the jalapeño if you are using it, and enough water to cover the ingredients. Heat over the stove on medium to high heat, and bring to a boil. Remove from heat and put in blender. Blend until everything is well mixed. You're now ready to pour over your tortilla chips and finish cooking your chilaquiles!

Hi! I am so excited to show you to make one of my favorite Mexican desserts, buñuelos. These are super easy to make and are great as dessert, with coffee, tea, or anything you want. They also make great gifts or they are great to bring to a potluck! You will need: Flour tortillas, about 6 more or less depending on how much you want to make. Ground Cinnamon Sugar of choice, brown, regular, etc. Oil of choice. To make them: Heat your pan and oil, I would say about a medium to medium-low heat. Cut your flour tortillas into triangles as if your making tortilla chips.  Mix well your ground cinnamon and sugar in a bowl or extended plate. Now you are ready to fry your flour tortilla triangles. Make sure to not leave the tortillas frying for too long or they will burn; they cook very quickly! Just fry them until they are golden or crispy enough and then take them out. I like to set a plate aside with some paper towels to let the tortilla triangles drain the excess oil....
